Beef Pot Roast
This simple, yet satisfying, slow-cooker meal is the perfect solution for a day too busy for cooking.
Ingredients:
1 2-3 pound beef roast of your favorite cut
1 large onion cut in eighths
1 16 ounce bag of baby carrots
4-6 medium sized potatoes
½ cup water
1 teaspoon salt
1 teaspoon pepper
Directions:
Place the potatoes, carrots, and onions in layers in the bottom of the slow cooker. Place roast on top of the vegetables add ½ cup of water, salt and pepper. Cook for four hours on high or six hours on low. Serves 4 to 6 people.
