Creamy Herb Pasta

This pasta is simply refined and filling. It is quick, simple and yields lots of wonderful creamy flavor. Pair this with a salad and some crusty bread and you’ve got a lovely healthy meal! 

Ingredients:
10 ounces dried rigatoni or rotini (about 4 cups)
¼ cup fresh basil or 4 teaspoons of dried crushed basil
4 cloves garlic, minced
1 tablespoon olive oil
½ of an 8-ounce package reduced-fat cream cheese
½ cup low-fat ricotta cheese
1/3 cup grated Parmesan cheese
½ water
¼ cup fresh parsley
2 tablespoons dry white wine

Directions: Cook pasta according to package directions. Drain and keep warm.
Meanwhile, for sauce, in a medium heavy saucepan cook basil and garlic in hot olive oil about 30 seconds. Reduce heat. Add cream cheese, ricotta cheese, and Parmesan cheese. Heat and stir until nearly smooth. Stir in water, parsley, and wine. Bring to a gentle boil; reduce heat. Cook and stir 2 to 3 minutes until slightly thickened. Serve sauce over hot pasta and enjoy! Serves 4.
